Goûter de Chefs - Food Experience Korea 2021

Several students from our Institut Paul Bocuse program joined Chef Gregory Defraize for Goûter de Chefs, the Food Experience Korea 2021, at the Sofitel Ambassador Seoul Hotel & Serviced Residences in Seoul last December. Chefs throughout Korea and various French Food Brands participated in this event organized by Atout France.
Students Gabi, Evelyne, Steve, and Railey accompanied Chef Defraize to this event. They were able to see firsthand what it's like working at a hotel like Sofitel. They all worked in the kitchen with the team at Sofitel and the French Head Chef Anne-Cecile Degenne. Opportunities to participate in special events like Goûter de Chefs, Food Experience Korea 2021, is one of the unique advantages of studying with us here at Woosong University.
Selected participants were asked to give a demo lesson where they created their own dish utilizing one of the French products there. Chef Defraize gave a demo lesson and was assisted by student chef Evelyne. Chef Defraize demoed two quick and easy desserts using the 'Jacquet' waffle snack. The Chef wanted to demonstrate one savory dessert and one sweet. The first dessert was a savory benedict waffle with spinach, a poached egg, and hollandaise sauce. That was followed by a sweet Suzette waffle with caramel orange sauce with Grand Marnier liquor.

During the demo lesson, student Gabi worked with the Sofitel team in the kitchen to create the demoed dish for 30 guests. Steve and Railey also got experience representing a French brand's product by the French Embassy.
